We’re proud to welcome Chef Antonio De Gracia as Head Chef at East, Hagley’s new Pan Asian restaurant. With more than 30 years of experience in some of the UK’s and Dubai’s most celebrated Japanese and sushi restaurants, Antonio brings a wealth of knowledge, creativity, and passion to our kitchen.
Of Filipino heritage, Antonio’s cooking celebrates the diversity of Asia, weaving together Japanese sushi and sashimi expertise with influences from China, Thailand, Korea, and beyond. Trained by a Japanese master chef in 1987, he built his reputation as a sushi specialist before leading teams at renowned restaurants such as Miyako at the Hyatt Regency Dubai, YO! Sushi, Rofuto, and Mizu Pan Asian Restaurant. Along the way, he has earned an AA Rosette and multiple Golden Chopstick Awards, including Best Restaurant in England.
His dishes reflect both precision and artistry, always with a focus on delivering unforgettable dining experiences. Now at East, Antonio is excited to share his vision with Hagley by bringing bold flavours, elegant presentation, and a true passion for Japanese, sushi, and Pan Asian cuisine to every plate.
